Spinach Cheese Bites
one 10 ounce package of sliced pepperoni one 10 ounce package of frozen chopped, spinach, thawed and drained 2 cups of ricotta cheese 1 1/2 cups of freshly grated Parmesan cheese 1 1/3 cups of finely chopped fresh mushrooms 1/4 cup of finely chopped onion 1 teaspoon of dried oregano 1/2 teaspoon of salt 2 large eggs, lightly beaten 1/4 cup of sour cream

Place 1 pepperoni slice in bottom of each lightly greased miniature (1 3/4 inch) muffin cup, set aside. Cut remaining pepperoni slices into 48 wedges, set wedges aside. Combine spinach and next 7 ingredients in a large bowl, spoon mixture into muffin cups. Bake at 375ºF. for 20 to 25 minutes or until lightly browned. Cool 10 minutes, gently remove to serving plate. Top each with a dollop of sour cream and a pepperoni wedge. 4 dozen
