Summer
Squash
3 tablespoons of corn oil or butter 1 onion,
sliced 1 large tomato, chopped 4 unpeeled yellow squash,
sliced 1 teaspoon of lemon juice salt to taste paprika |

Sauté onions in oil or butter for 2- 3 minutes. Add tomato and squash. Cove, cook over low heat for 15- 20 minutes. Season and sprinkle a little paprika and serve.
