| | Fluffy Sweet Potatoes in Orange Shells
8 small oranges 5 medium size sweet potatoes, boiled, peeled and mashed (about 4 cups)1/2 cup of milk 1/4 cup of firmly packed brown sugar 3 tablespoons of honey 2 tablespoons of butter or margarine, softened a dash of salt a dash of pepper a dash of ground nutmeg 1/3 cup of finely chopped pecans
Cut a thin slice from bottom of each orange so that it will sit flat. Cut a 1 inch slice from top of oranges. Gently remove pulp, leaving shells intact. Scallop edges and set aside. Combine hot potatoes, milk, sugar, honey, butter, salt, pepper and nutmeg; mix well. Spoon mixture into prepared orange cups; sprinkle with pecans. Bake at 325ºF. for 10 minutes. Yield: 8 servings
Note: If desired, sweet potato mixture can be piped into orange shells for a more festive appearance. |
