Glazed Yams & Mini Ham Loaves

1 pound of ground ham
1 pound of pork sausage
1/3 cup of soft bread crumbs
2 tablespoons of minced celery
2 tablespoons of minced onion
2 tablespoons of minced parsley
1/4 teaspoon of nutmeg
1/4 teaspoon of thyme
1/2 teaspoon of salt
1/4 teaspoon of pepper
3/4 cup of milk
1 egg, slightly beaten
one 16 ounce can of whole cranberry sauce
1/2 cup of dark corn syrup
1/8 teaspoon of ground cloves
4 cooked, peeled, Louisiana yams, sliced



Combine the ham, sausage, bread crumbs, seasonings, milk and egg. Mix well and shape into 6 round loaves. Place each loaf in an individual baking dish. Bake at 350ºF. for 25 to 30 minutes. Combine the cranberry sauce, corn syrup and cloves in a saucepan and cook over low heat, stirring until the cranberry sauce melts and blend with the corn syrup. Add the yam slices and stir to coat well.

Remove the ham loaves from oven when done and pour off the excess drippings. Spoon the yams around each loaf. Spoon remaining cranberry glaze over loaves. Return the loaves to oven and bake for 5 to 10 minutes or  until tops of loaves are glazed
