Southern Sweet Potato Soufflé, with Sherry

Southern Sweet Potato Soufflé with Sherry

3 cups of mashed sweet potatoes
1/2 teaspoon salt
1/4 cup of melted butter
1 cup of sugar
1/2 cup of milk
2 beaten eggs
1 tablespoon of sherry
1/2 teaspoon of ground nutmeg
1/2 cup of sour cream
1/8 teaspoon of soda
Raisins, marshmallows, and/or pecans for topping


Boil 4 large, unpeeled sweet potatoes to make 3 cups of mashed potatoes. Stir all ingredients, adding the soda last. Preheat oven to 350ºF. Bake, uncovered, in a 2-quart casserole dish. Add raisin and/or nut toppings and bake for 35 minutes. If marshmallow topping is used, add after the 35 minute cooking time and return dish to oven for marshmallows to melt and become lightly browned
