| Stuffed Baked Sweet Potatoes
4 medium sweet potatoes, washed 1 small ripe banana, peeled 2 tablespoons of butter or margarine 1/3 cup of fresh orange juice 1 tablespoon of brown sugar 1 1/2 teaspoon of salt 1/4 cup of chopped pecans |

Bake sweet potatoes at 375ºF. for 45 minutes to 1 hour, or until tender when tested with a fork. Cut a lengthwise slice from each potato. Scoop out sweet potatoes into a bowl, reserve shells. Mash the banana with potatoes, add butter, orange juice, brown sugar, and salt and beat thoroughly. Spoon the mixture into shells. Sprinkle with pecans. Set on a cookie sheet. Return to oven for 12 - 15 minutes, or until heated. Makes 4 servings |
