Stuffed Raisin Sweet Potatoes

4 large sweet potatoes
1/4 cup of honey
1/4 cup of raisins
2 - 3 tablespoons of orange juice
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/4 teaspoon of ginger
1 peeled orange, chopped
1 tablespoon of melted butter



Bake sweet potatoes at 375ºF.   for about an hour or until tender. Let cool slightly. Slice in half lengthwise and scoop out potato, leaving about 1/4 inch wall near skin. In a bowl mash sweet potatoes and add remaining ingredients. Mix until fluffy and pile into potato shells. Heat in 350ºF. oven for about 15 minutes. Serves 6 - 8
