Sweet Potato Casserole #4

3 medium size sweet potatoes, boiled, peeled and mashed, about 2 cups
1 cup of sugar
2 eggs, slightly beaten
1 cup of milk
1/2 cup of butter or margarine, melted
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg
1 teaspoon of vanilla extract
1/2 cup of chopped pecans



Combine potatoes, sugar, eggs, milk, butter, cinnamon, nutmeg, and vanilla; beat at medium speed of an electric mixer until smooth. Spoon mixture into a  well greased  1 1/2 quart casserole. Sprinkle pecans over top. Bake, uncovered, at 350ºF. for 1 hour. Yield: 8 servings
