Sweet Potato & Apple Casserole

6 sweet potatoes or yams
4 tart apples
1/2 cup of brown sugar
1/2 teaspoon of nutmeg
1/2 teaspoon of cinnamon
1/4 teaspoon of allspice
1 teaspoon of salt
1/4 cup of orange juice
1/4 cup of lemon juice
1/2 cup of butter
whole cloves
1 teaspoon of grated orange peel
2 tablespoons of sugar



Wash and boil the sweet potatoes or yams until soft, about 20 to 30 minutes. Peel them, and slice into a bowl. In another bowl, place the peeled, cored and sliced apples. Mix the brown sugar, nutmeg, cinnamon, allspice and salt. Sprinkle half over the potatoes and half over the apples. Pour the orange and lemon juice over the apples and l et them stand for a few minutes. Preheat the oven to 400ºF. Drain the apples, reserving the juice. Arrange alternate layers of apples and sweet potatoes in a buttered casserole, dotting each layer with the butter and a few whole cloves.. Pour the juice from the apples over the casserole and sprinkle the grated orange peel mixed with the 2 tablespoons of sugar over the top. Bake at 400 for 35 to 45 minutes. Serves 6
