Sweet Potato Casserole #3

Topping
1 cup of packed light brown sugar
1/2 cup of all purpose flour
1/3 cup of melted butter

Casserole
3 pounds of  sweet potatoes, cooked and peeled
1/2 cup (1 stick) of butter, softened
1 teaspoon of vanilla
1/2 cup of sugar
2 eggs, beaten
1/2 cup of evaporated milk
1 cup of pecans, chopped




Prepare Topping: Combine the brown sugar, flour and butter in a melted butter. Set aside.

Preheat oven t o 350ºF. Grease 13x9 inch baking dish.

Mash the sweet potatoes with butter in large bowl. Beat with electric mixer until light and fluffy.

One at a time, add vanilla, sugar, eggs and evaporated milk, beating after each addition. Spread in prepared baking dish. Spoon topping over potatoes and sprinkle with pecans. Bake 25 minutes or until heated through. Serve hot.  Makes 8 - 12 servings
