Sweet Potato Croquettes

2 cups of hot boiled yams
1/2 cup of hot milk
1 teaspoon of salt
1/4 teaspoon of ground cloves
1/4 teaspoon of ground ginger
1/8 teaspoon of nutmeg
2 large tablespoons of butter
2 eggs
bread crumbs



Mash the hot yams thoroughly while hot, measure 2 cups and beat until smooth and light. Beat in the hot milk, salt, spices and butter. Beat 1 egg well and add, mixing thoroughly. Chill the mixture.
Shape the chilled mixture into croquettes in it, then roll them in bread crumbs. Heat deep fat at 375ºF. on the deep fat thermometer (or until a cube of bread browns in 40 seconds). Fry the croquettes in the hot fat a few at a time until golden brown (about 4 minutes). Drain on paper towels.
The yam mixture may be shaped into patties, dipped in egg, rolled in bread crumbs, and sautéed in hot butter. Serves 6
