Sweet Potato Puff


 

Sweet Potato Puff

1/4 cup of blanched, chopped almonds or pecans
2 cups of mashed cooked sweet potatoes
2/3 cup of orange juice
3/4 teaspoon of salt
1/2 cup of brown sugar
1 teaspoon of vanilla
1 teaspoon of nutmeg
1 teaspoon of allspice
3 tablespoons of melted butter
2 eggs, separated 


Combine the potatoes, orange juice, salt, brown sugar, vanilla, nutmeg, allspice. Add melted butter. Separate the eggs and blend yolks and almonds into sweet potato mixture. Beat egg whites stiff but not dry. Fold into sweet potato mixture. Pour into 1 quart greased casserole. Bake for 30 - 35 minutes at 375ºF. Serves 6
