Tempura Vegetables

1 cup of flour
2 eggs
1/4 cup of soy sauce
1/2 cup of water
vegetable oil for frying
2 green peppers
1/2 pound of mushrooms
1 onion
1/2 pound of broccoli
1 sweet potato





Beat the eggs with the soy sauce and water and mix in the flour. Set aside for 20 minutes. To prepare the vegetables, cut the green peppers into 1/2 inch wide strips, onion into 1/2 inch slices, sweet potato into 1/2 inch slices, break the broccoli into small florets and leave the mushrooms whole. Pour 4 inches of oil into a pan, heat it, dip the vegetables in the batter, drop in the hot oil and fry until golden brown. Drain and serve with soy sauce passes separately.
