Fresh Tomato Pie
one 5 ounce can of Hungry Jack biscuits, not buttermilk
3 to4 ripe tomatoes, sliced
salt
pepper
basil
1/2 cup of chopped green onion
1/2 cup of lite mayonnaise
4 to 5 ounces of Monterey jack cheese, grated |

Press the biscuits to cover the bottom only of a 9 inch pie plate. Cover
with a layer of sliced tomatoes. Sprinkle with salt, pepper, and basil,
then some of the onion. Repeat in that order. "Frost with the mayonnaise
and grated cheese which have been mixed together, Bake at 425ºF. for 20
minutes. The top will be brown. Let set for 10 minutes before
slicing.
