Sautéed Rice and Tomatoes

2/3 cup of uncooked regular rice
1/4 cup of vegetable oil
1 1/3 cups of water
1/2 cup of chopped onion
1/4 cup of bacon drippings
2 large tomatoes, peeled and chopped
1 teaspoon of salt
1/2 teaspoon of pepper



Cook rice in oil in a small cast iron skillet, stirring frequently until rice is lightly browned. Add water, and bring to a boil. Reduce heat: cover and simmer 20 minutes or until rice is tender. Set  aside.

Sauté onion in bacon drippings until tender. Add tomatoes, salt, and pepper; bring to a boil. reduce heat; cover and simmer 15 minutes. Add rice; stir well.
Yield: 4 servings
