4 large tomatoes pepper to taste 8 teaspoons of unsalted butter 1/4 cup of chopped parsley 1/3 cup of chopped green onions, including tops or 1/3 cup of onions 1 teaspoon of basil 1 teaspoon of tarragon 1 clove garlic, minced
Cut tomatoes crosswise into halves. Sprinkle with pepper, top each with 1 teaspoon of butter. Mix remaining ingredients on 2 pieces of aluminum foil. Wrap and seal tightly. Grill on charcoal or bake in oven until soft, approximately 20 minutes. Serves 4 |
