| | Tomatoes in Yogurt Sauce
1 tablespoon of olive oil 1 onion, chopped 1 green pepper, sliced in strips 4 medium tomatoes, sliced 1 teaspoon of dried basil or 2 teaspoons of fresh basil 3 cloves garlic, pressed 1/4 cup of wine 1/2 cup of nonfat, plain yogurt Pimento
In a nonstick skillet hat 1 tablespoon of olive oil. Sauté onions and peppers until just soft. Add the tomatoes, basil, and garlic and heat through. Pour wine over mixture and bring to a simmer. Reduce the heat and add yogurt. Sprinkle with chopped parsley and garnish with pimento strips. Serves 4 |
