| Vegetables Alfredo
1 cup of broccoli, chopped 1 cup of cauliflower, canned 1 cup of mushroom caps, chopped 2 tablespoons of olive oil 2 garlic cloves, minced 1/2 cup of Alfredo sauce 1/2 cup of Parmesan cheese, grated
Chop vegetables into bite size pieces. Place broccoli into steamer for 3 to 5 minutes or until desired tenderness. Sauté garlic and mushrooms in olive oil for 2 minutes. Drain. Add sauce a and steamed vegetables to mushrooms. Stir. Sprinkle on top the Parmesan cheese and serve.
You can substitute zucchini, yellow squash, or asparagus to make nice variations. Makes 3 servings. |
