2 acorn squash 1/3 cup of fresh orange juice 1/2 cup of packed dark brown sugar 1/4 cup of light corn syrup 1/4 cup of butter or margarine 2 teaspoons of grated fresh lemon rind 1/8 teaspoon of salt
Cut off ends of squash. Slice crosswise into 1 inch rings and remove seeds. Place in a single layer in a large, shallow baking dish and add orange juice. Cover and bake in preheated 350ºF. oven for 30 minutes. Combine the remaining ingredients, simmer for 5 minutes. Pour over squash rings and bake, uncovered, 15 minutes longer, basting occasionally. Makes 6 servings
