| | Marinated Squash Salad
4 cups of yellow squash, sliced 4 cups of zucchini, sliced 1 medium size red onion, sliced and separated into rings one 8 ounce bottle Italian salad dressing 1/2 teaspoon of salt 1/4 teaspoon of pepper
Combine all ingredients in a large bowl. Cover and refrigerator overnight. Drain vegetables, discarding marinade. Arrange vegetables on a serving platter. Yield 6 to 8 servings
Note: For a quicker side dish, sauté onion in 2 tablespoons Italian salad dressing over medium heat until soft, cover and cook until squash is tender. Season with additional salad, salt and pepper. |
