Zucchini Quiche
1 cup of corn muffin mix
3 cups of sliced small zucchini squash
1 medium onion, chopped
1/2 cup of Parmesan cheese, grated
1/3 cup of cooking oil
salt and pepper to taste
1 cup of rich cream of half and half
Instructions:Mix all ingredients together. Pour into a buttered 10inch
pie plate or quiche dish. Bake 45 minutes at 350ºF. Can be frozen and
baked when needed. If preferred, slice tomato or green pepper rings to place
on top. Nice served with relish plate of fresh vegetables and melon or other
raw fruit for a luncheon.
