Zucchini Quiche
2 cups of zucchini, sliced thin 1 cup of onion, sliced 3 tablespoons of oil 1 clove garlic, minced 1 1/2 teaspoons of salt 4 eggs, beaten 1 cup of milk 1 cup of heavy cream 1/2 cup of mozzarella cheese, grated 10 inch pie crust |

Sauté zucchini, onion And garlic in oil. Season with salt. Cover pie crust with this mixture. Combine remaining ingredients and pour into pie shell. Bake in preheated 375ºF. oven 30 -35 minutes until custard is set. Serve hot. Serves 8
