Baked Zucchini

2 tablespoons of dried onion flakes
12 ounces of tomato juice
1/8 teaspoon of oregano
1/8 teaspoon  of garlic powder
salt and pepper to taste
4 - 6 zucchini, sliced
Parmesan cheese, optional


Simmer the onion flakes, tomato juice, oregano, garlic powder, salt and pepper, until the sauce is thickened. Place the zucchini in a casserole dish and pour the sauce over. Bake, covered in a 350ºF. oven for 20 minutes. Sprinkle Parmesan cheese on top (one sprinkle) and allow to bake, uncovered for 10 minutes longer, or until the zucchini is tender.
