2 teaspoons of olive oil 1/4 cup of minced onion 1 clove garlic, minced 1 cup of grated or thinly sliced zucchini 1/4 teaspoon of dried basil 1/4 teaspoon of dried oregano 4 tomato slices 2 slices of multigrain bread 1 tablespoon of grated Parmesan cheese Pepper
Heat oil in a medium skillet over medium heat. Sauté the onion and garlic until the onion is soft, about 3 minutes. Add the zucchini, basil, and oregano and continue cooking until it softens, about 3 minutes. Layer half of the vegetables and tomato slices on each slice of bread. Lightly sprinkle with Parmesan cheese. Broil for 1 minute or until the cheese melts. Pepper to taste. Eat with a knife and fork. Makes one serving
