2 medium zucchini (1 1/2 pounds), halved lengthwise 3 tablespoons of butter or margarine 1/3 cup of chopped onion 1/3 cup of chopped green pepper one 10 ounce package of frozen corn, thawed 1 teaspoon of dried tarragon leaves 1/4 teaspoon of pepper
With spoon, scoop pulp from zucchini halves, leaving 1/4 inch shell intact: sprinkle with 1/8 teaspoon of salt. Chop zucchini pulp. Place butter in 1 quart microwave safe dish, microwave at HIGH, 1 minute or until melted. Stir in zucchini pulp, onion and green pepper, microwave at HIGH, 3 minutes. Combine corn, tarragon, 1/8 teaspoon of salt and the pepper with onion mixture, microwave at HIGH, 2 minutes. Spoon vegetable mixture into zucchini halves, mounding. Place filled zucchini shells in a shallow microwave safe dish. Cover with waxed paper, microwave at HIGH 6 - 8 minutes or until zucchini is just tender. Remove from oven, let stand, covered, 3 to 5 minutes before serving. Makes 6 servings
