Curried Lamb w/Zucchini
2 1/2 tablespoons of butter 1 onion, chopped 1 green pepper, thinly sliced 1 clove garlic, mashed 3 - 4 zucchini, sliced 1 cup of chicken stock 2 tablespoons of soy sauce 2 teaspoons of dry mustard 1/3 - 1/2 cup of apricot preserves 1 - 2 teaspoons of curry powder 1 tablespoon of cornstarch dissolved in 2 tablespoons of water 2 - 3 cups of cubed cooked lamb 1 avocado, sliced |

Add butter to large skillet, add onion, pepper, garlic, sauté. Add the zucchini and sauté for 5 minutes. Add stock, soy sauce, mustard, preserves and curry powder. Add cornstarch to thicken. Add lamb to skillet and heat. Add avocado and serve. Serves 4.
