Fran's Zucchini Bread
3 eggs 1 cup of oil 2 cups of sugar 2 heaping cups of zucchini peeled and medium grated 1 teaspoon of vanilla 3 cups of flour 2 teaspoon of cinnamon 1 teaspoon of baking soda 1 teaspoon of salt 1/4 teaspoon of baking powder 3/4 cup of walnuts, chopped |

Beat eggs until light and foamy. Add oil, sugar, zucchini and vanilla and beat well. Sift flour with cinnamon, baking soda, salt, baking powder and add to the creamed mixture.
Fold in walnuts. Pour into 2 large loaf pans which have been greased and floured. Bake for 1 hour at 325ºF.
