Pasta Shells w/Zucchini
6 ounces of pasta shells 3 tablespoons of olive oil 3 cloves garlic, peeled and finely chopped 1 zucchini, sliced 1 teaspoon of chopped fresh oregano or 1/2 teaspoon of dried oregano salt and pepper to taste 2 tablespoons of chopped parsley |

Cook pasta in boiling, salted water until just tender, following package directions; drain. Heat oil in frying pan. Add garlic and sauté for 1 minute. Add zucchini and sauté until golden brown. Season with oregano, salt and pepper. Mix pasta shells with vegetables. If pasta is no longer hot, cook with vegetables over medium low heat until thoroughly heated. Sprinkle with parsley, then serve. Serves 4
