Rotelle w/Zucchini Sauce
8 ounces of rotelle 1 tablespoon of oil 1 clove garlic, peeled and minced 1 cup of minced onion 4 cups of diced zucchini 1/2 cup of sliced mushrooms one 15 ounce can of tomato sauce Salt and pepper to taste 1/2 teaspoon of oregano |

Cook rotelle in boiling, salted water following package directions; drain. Heat oil in frying pan. Add garlic, onion, zucchini, and mushrooms; sauté until tender. Add tomato sauce, salt, pepper, and oregano. Simmer for 3 minutes. Place hot pasta in serving dish. Pour zucchini sauce on top, toss well and serve. Serves 6 - 8
