Sautéed Zucchini w/ Mushrooms
1 clove garlic, minced 2 tablespoons of sesame oil 2 cups of thinly sliced zucchini 1 cup of sliced fresh mushrooms 1 tablespoon of finely chopped fresh basil 1/2 teaspoon of salt 1/4 teaspoon of seasoned pepper 1 medium tomato, peeled and finely chopped 1/3 cup of freshly grated Parmesan cheese 2 tablespoons of crushed croutons |

Cook garlic in sesame oil in a large skillet, stirring constantly, until tender. Add zucchini and next 4 ingredients, cook 4 minutes, stirring constantly. Add chopped tomato and cook, stirring constantly, until mixture is thoroughly heated. Sprinkle with cheese and croutons. Serve immediately. Yield 4 servings
