Spicy Zucchini & Bacon Canapés

one 4 ounce carton of low fat cottage cheese, well drained
2 green onions, finely chopped
1/2 tablespoon of finely chopped jalapeno peppers
1/2 teaspoon of Mrs. Dash Original Blend
2 medium zucchini, cut into 1/4 inch slices
8 slices of Armour Lower salt Bacon, cooked crisp and crumbled
2 tablespoons of finely chopped red pepper or 6 cherry tomatoes, quartered

Combine cottage cheese, green onions, jalapeno and seasonings in small bowl. Mound cottage cheese mixture evenly on top of zucchini slices, sprinkle with bacon. Top with sprinkle of red pepper or cherry tomato quarter. Garnish with fresh chives or small sprig of parsley, if desired. Makes 22 - 24 canapés
