Stir Fry Sweet Peppers & Zucchini

3 - 4 tablespoons of olive oil
1 large onion, cut into thin strips
1 large sweet red pepper, cut into thin strips
2 small zucchini, cut into matchsticks
1 garlic clove, minced
2 1/2 tablespoons of fresh basil or 1 1/2 teaspoons of dried, crumbled
1/4 teaspoon of fresh thyme or a generous pinch of dried
salt & freshly ground pepper


Heat the oil in wok or large skillet over high heat. Add onion and red pepper and stir fry until onion softened slightly, about 2 minutes. Add zucchini, garlic and herbs and stir fry another 2 minutes. If not serving immediately, reheat by stir frying over high heat about 3 minutes. Season with salt and pepper to taste. 2 servings
