1 - 1 1/2 pounds of zucchini or yellow squash 1 1/2 cups of cheddar cheese (adjust for how much cheese you desire) 4 pieces of bacon, diced salt and pepper
Slice the squash on bottom of casserole. Sprinkle with salt and pepper. Put a layer of cheese on top. Place a few diced pieces of bacon partially cooked on top. Repeat layers according to your wish. Bake at 350ºF. for 30 minutes. Serves 4
