Zucchini
Casserole 3
1 medium zucchini, grated or chopped 1
large green pepper, chopped 2 medium onions, chopped 1
pound can of tomatoes 3 or 4 teaspoons of margarine 1
tablespoon of flour 1/2 cup of bread crumbs 1 cup of
grated cheese salt, pepper and sugar to taste

Grease a casserole with a little margarine. Set aside. Steam the zucchini until tender and season with salt. Set aside. To make the sauce: Sauté the onions, green peppers in a little margarine until tender. Add tomatoes and cook for 5 minutes. Sprinkle in flour, salt, and pepper and sugar to taste. Now line the casserole with a layer of zucchini, then a layer of sauce, then a layer of cheese. Repeat. Sprinkle top layer with bread crumbs and cheese and dot with remaining margarine. Bake at 325ºF. for 20 - 30 minutes. Cool slightly before serving.
