Zucchini Casserole 4
1 tablespoon of oregano 1 tablespoon of thyme 1 tablespoon of sweet basil 3 cups of canned tomatoes 1/4 cup of olive oil 6 unpeeled zucchini, sliced 2 cups of bread cubes, white or whole wheat 2 cups of grated Swiss cheese |

Mix seasonings with tomato and olive oil in blender and blend for a few
seconds. Put half of zucchini and 1 cup of bread cubes in casserole dish and
pour half of tomato mixture over. Sprinkle 1 cup of Swiss cheese. Add the
rest of the zucchini and bread cubes. Pour the second half of tomato mixture
over. Sprinkle the remaining Swiss cheese on top and bake at 325ºF. for 1
hour.
