Zucchini & Cheese Pizza
1 teaspoon of olive oil 1/4 cup of finely chopped onion 1/4 teaspoon of dried basil 1small zucchini, grated, about 1 cup 1/2 cup of chopped tomato 1 (6 inch) pita bread Grated Monterey Jack cheese salt and pepper |

Preheat oven to 450ºF. Heat oil in a medium skillet over medium heat. Sauté the onion and basil for 3 minutes. Add the zucchini and cook, stirring frequently for 2 minutes. Add the tomato and cook for another minute. Remove from the heat. Lightly toast the pita bread for 3 minutes in the oven. Remove the pita from the oven. Carefully split the pita bread around its outer edge to yield two equal rounds. Spoon the filling onto the two crusts. Sprinkle with grated Monterey Jack cheese. Return the pizza to the oven and bake just until the cheese melts, 1 or 2 minutes. Season with salt and pepper. Makes two servings
