Vegetables > Zucchini

 

Zucchini Crepes

5 - 6 zucchini, shredded
1 teaspoon of salt

5 eggs
2/3 cup of milk
2 minced green onions
1 clove garlic, minced
3/4 teaspoon of baking powder
a dash of Tabasco

2 cups of ricotta cheese
1 cup of grated Monterey Jack or similar white cheese
1 cup of grated Parmesan cheese
a dash of salt

Mix the zucchini and salt and let stand in colander for 30 minutes. Drain, and press out water. In a blender mix the next  6 ingredients, then stir in zucchini. Fry 1/4 cup of batter at a time, spreading it out, in buttered 8 inch pan over high heat.

Mix the remaining ingredients well, fill crepes, and roll up. Bake in 400ºF. oven about 10 minutes, until cheese melts. Serves 8
