1 medium onion, chopped 1
tablespoon of vegetable oil 1 pound of fresh green beans,
snapped 3 medium tomatoes, seeded and coarsely chopped 3/4
teaspoon of salt 1 pound of zucchini, sliced 1/2 (4 ounce)
can of chopped green chilies
Sauté the onion in oil in a large saucepan for 2 minutes. Add snapped green
beans, tomatoes, and salt, cover and cook over medium heat 20 - 25 minutes
or until beans are tender, stirring often. Add the zucchini and chilies,
cover and continue cooking for 10 minutes. Transfer to a serving bowl. Serve
immediately. 8 servings
