Vegetables > Zucchini

 

Zucchini Italiano (microwave)

3 tablespoons of olive oil
2 small white onions, chopped
1 garlic clove, mashed
1 pound of firm 1 1/2 inch diameter zucchini, cut into 1/4 inch slices
1 teaspoon of seasoned salt
1/4 teaspoon of oregano

Combine oil, onion and garlic in an 8 inch square glass baking dish and cook 3 minutes on HIGH. Stir in zucchini and season with salt  and oregano. Cover and cook 3 minutes. Stir. Let stand, covered, 5 minutes before serving. 4 servings
