Zucchini
Medley
2 medium zucchini, sliced diagonally 1 medium
onion, halved and thinly sliced into rings 1 teaspoon of
dried oregano leaves, crumbled or another herb salt and
freshly ground pepper 2 tablespoons of butter 2 medium
tomatoes, sliced 1/2 green pepper, cut into 1/2 inch slices
1/2 cup of shredded Parmesan, Monterey Jack or cheddar cheese,

Arrange the zucchini slices in bottom of 2 quart round casserole. Top with onion. Sprinkle with some of the oregano, salt, and pepper. Dot with some of the butter. Top with tomatoes, then green pepper. Dot with remaining butter and sprinkle with remaining oregano. Cover and cook on HIGH 7 minutes. Sprinkle with cheese if desired. If using Monterey Jack or cheddar, cook on HIGH 1 minute to melt cheese. 4 servings
