Zucchini Parmesan 3
4 cups of thinly sliced zucchini 1 small onion, sliced 1 tablespoon of water 2 tablespoons of butter or margarine 1 teaspoon of salt a dash of pepper 3 tablespoons of grated Parmesan cheese |

Place all ingredients except cheese in skillet. Cover and cook 1 minute. Uncover and continue to cool, turning with a wide spatula, till barely tender, about 5 minutes longer. Sprinkle with cheese, toss. Serves 8
