Zucchini in Salsa Verde
6 medium zucchini, sliced 1 inch thick 1/2 cup of flour 1 3/4 teaspoons of salt Olive oil 3 tablespoons of white wine vinegar 3 minced anchovies 1/2 clove garlic, minced 1/4 cup of minced fresh parsley Juice of 1 lemon 1/2 teaspoon of freshly ground pepper |

Roll the zucchini in flour and salt, then brown in oil. Combine the remaining ingredients and pour over zucchini. Marinate 2 - 3 hours.
