1 pound of zucchini, diced 1 tablespoon of butter 1/2 teaspoon of curry powder 1 small onion 2 cups of chicken broth 1/2 teaspoon of lemon juice 2 tablespoons of snipped chives
Cook zucchini, onion and butter over low heat until tender, do not brown. Add the remaining ingredients, except chives. Puree in blender or food processor until smooth. Add salt if desired. Ladle into heated bowls and top with chopped fresh chives. Very low in calories, but truly delicious.
