Zucchini Tomato Skillet
1/2 cup of green onion, sliced 1 clove garlic, minced 1 teaspoon of salad oil 1 teaspoon of sugar 1 bay leaf 2 pounds of unpeeled zucchini, sliced 3 peeled tomatoes, cut in eights |

Cook the onion and garlic in oil until tender. Add sugar, bay leaf, 1 teaspoon of salt, 1/8 teaspoon of pepper and zucchini. Cover, simmer for 10 minutes, stirring occasionally. Add tomatoes, heat. Remove bay leaf. Serves 10 - 12
