Eggnog Quick Bread 1

2 eggs
1 cup of sugar
1 cup of dairy eggnog (not canned)
1/2 cup of butter or margarine; melted
2 teaspoons of rum extract
1 teaspoon of vanilla
2 1/4cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1/4 teaspoon of nutmeg  

Heat oven to 350ºF.  Grease the bottom only of 9x5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and nutmeg; stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 45-50 minutes. Cool in pan for 10 minutes then remove. Cool completely
