Rich Boiled Fruit Cake

Rich Boiled Fruit Cake

Categories: Ginger, Raisin, Cakes

8 ounces of flour
6 ounces of margarine
6 ounces of sugar
4 ounces of currants
4 ounces of raisins
4 ounces of sultanas
1 teaspoon of mixed spices
1 teaspoon of baking soda
1/2 teaspoon of ground ginger
1/2 pint of water
2 Large eggs



Place margarine, sugar, fruit and water into saucepan. Bring to a boil and simmer for approximately 10 minutes. Leave to cool. Sieve flour, spices, and baking soda and add to contents of saucepan. Beat eggs into mixture and pour into a greased and lined 7" square baking pan. Bake at 160ºC. (320ºF.  gas mark 3) for 75 minutes.
