Easy Holiday Fruit Cake

1 pk 1 lb 3 oz white cake mix
1 Egg
1/4 cup of water
1 teaspoon of salt
1 teaspoon of Lemon extract
3 Eggs
1/2 cups of sifted all purpose flour
1 pound of light raisins
1 pound of whole pecans
1/2 pound of whole candied cherries
1/2 pound of candied pineapple, cut
 

Line two greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans with waxed paper; grease paper. Combine cake mix, egg, water, salt and lemon extract in large bowl of electric mixer. Beat two minutes at medium speed. Add 3 eggs; b eat w minutes longer. Mix flour and remaining ingredients; stir into cake batter. Pour into the two prepared pans. Bake at 275ºF. for about two hours.
