White Fruitcake 3

1 package (18.25 ounces) of white cake mix
2/3 cups of vegetable oil
1/2 cup of sweetened condensed milk
2 egg whites
1 1/2 cups chopped candied fruit
1 1/2 cups of chopped walnuts


Preheat oven to 350ºF. In a large bowl, beat cake mix, oil, condensed milk, and egg whites on low speed of an electric mixer until moistened; increase to high speed for 2 minutes. Stir in fruit and pecans. Spoon batter into 2 greased and floured 5 X 9-inch baking pans. Bake 40 to 45 minutes or until a toothpick inserted in center of cake comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely on a wire rack. Store in an airtight container. Yields 2 fruitcake loaves.
