Leftover Tamale Pie

Leftover Tamale Pie

2 cups of crumbled leftover meat loaf
one 8 ounce can of tomato sauce
1 teaspoon of chili powder or more to taste
1 cup of whole kernel corn
8 green olives, pitted and sliced
3/4 cup of corn meal
3 cups of boiling water
1 teaspoon of salt
1/4 cup of grated Jack cheese
1 tablespoon of butter


Mix meat loaf, tomato sauce, chili powder, corn, and olives and place in a 2 quart casserole. Cook corn meal in boiling water with salt 5 minutes, stirring constantly. Place mush on top of meat mixture. Sprinkle with grated cheese and dot with butter. Bake in 350ºF.   oven until brown on top, about 30 minutes. Serves 4

Note: If you happen to have a bit of Italian hot sausage in the refrigerator, remove from casing, crumble, and cook in a little better until it loses its red color. Add to meat mixture.
