Baked Curried Turkey & Rice

1 cup of long grain rice
1 medium onion, chopped
1/3 cup of butter
2 tablespoons of curry powder
3 cups of diced leftover turkey
2 1/2 cups of turkey broth
salt to taste




Preheat oven to 350ºF.
Sauté the rice and onion in melted butter, stirring often until rice turns pale yellow. Blend in curry powder and sauté for 2 minutes longer. Stir in turkey, broth and salt. Spoon mixture into greased 2 quart casserole. Bake for 25 minutes or until liquid is absorbed and rice is fluffy. Remove from oven and serve. Serves 4
